The restaurant Lauderdale - found in the Keyakizaka Complex at Roppongi Hills - gets its name from Fort Lauderdale, a city on the Atlantic coast of the US near the Caribbean Sea.

It provides a casual, North American feel right in the centre of Tokyo, and offers cuisine created with the chef's incredible skill. This is what makes Lauderdale a place to visit.

It is open almost all day long, from 7AM (8AM on weekends and holidays) all the way to midnight. They are never idle, with customers filling the tables at breakfast, lunch, dinner, and all times in between. It's nice to have a place that is tailored to you - a place that's open when you want to go.

The items on the menu are simple, and they harness the flavours of their ingredients perfectly. The daily fresh fish bouillabaisse is made with an entire fish, but you can also get a plate of luscious Iwanaka pork baked in a Dutch oven.

While the restaurant itself has a casual, bistro-like style, the food is made using authentic French cuisine methods which sets Lauderdale apart.

There is also a rich selection of alcoholic beverages on hand, with around ten types of red, white, and sparkling wines offered in the bottle, in a carafe, or by the glass, making it easy to choose exactly how much you want.

Whether you are going out for a proper dinner or just coming home from work and feel like popping in for a drink and something good to eat, Lauderdale is good for every occasion. In Roppongi, where everyone lives an active lifestyle, it has something for everyone.

Served as hall manager at Enoteca Pinchiorri's sister restaurant, and later worked at Vinpicouer Hotel in Nagano. Was involved with the launch of L'effervescence before becoming chef at Lauderdale in 2012.

Interview

What made you want to become a chef?
I've liked cooking since I was in high school. But then I was only making stuff like fried rice for dinner, white sauce, that sort of thing.

That was when the Italian boom hit Japan, and I started thinking that I wanted to do something connected to Italy. That's when I decided to become a chef.
How did you design your menu?
Right now we're suffering from some growing pains because I changed the dinner menu six months ago. I'm aiming for a classic style with my own flair. We work under an "always open" concept, which is why we're open for such a long time each day.

I want the restaurant to have the kind of casual atmosphere where people can just drop by anytime they like, and a lot of the items on the menu can be shared between people.
What do you look for in ingredients?
For the Dutch oven dish, I use Iwanaka pork from Iwate Prefecture, and I get my leeks from Takenaka Farm, which Chef Namae at L'effervescence told me about.

Also, I get my mesclun greens from a farmer in Shimane Prefecture. Most places grow mesclun using hydroponic methods, but that place grows them in the ground so they have a powerful flavour.
