Sanno Park Tower is a landmark of the Akasaka-Tameike-Sanno area. Take the dedicated shuttle elevator and in a moment, you arrive at Shunju Tameike-Sanno. Walk into the open space more than 550 square metres in area, and see the view from the 27th floor open up before your eyes. Surprising in both scale and beauty, it promises a special evening you are sure to remember.

From tables in the main dining room to Japanese style private rooms, it is the perfect place for any gathering, from a dinner with friends, to dates, dinners with clients, or bigger parties.

Surrounded by the beautiful view, you will be greeted with the finest of Japanese-based creative cuisine. This is high-quality fare, with fresh seafood from Tsukiji Market, Mitsuhama Fishing Port in Ehime Prefecture and other regions, select cuts of Shiga and Izumo Katsube Beef, and fresh vegetables sourced from contracted suppliers such as Kawada Farms in Tochigi. Only simple and delicate seasoning is used in order to capture the true, delicious flavours of such incredible ingredients.

One of Shunju's most popular dishes is the "kama gohan", made to order with only the best ingredients of the season, including eel and crab. Because it's made to order, the moment you open the lid of the "kama" or kettle, you are enveloped with a gloriously aromatic burst of steam. One taste of the full, rich flavours and you will fall in love. Perfect both as a main dish, or as a snack after a few drinks.

The drink selection includes champagne, wine, sake, and shochu, all chosen to set off the delicious flavours of the menu. The most popular course meal is the Shunju Course at 8,500 yen, but guests can also choose the Seasonal Course at 6,800 yen or the Select Course at 11,800 yen. The lunch options, healthy and packed with the freshest seasonal vegetables, are also popular.

Born Saitama, 1987.
Worked in Western cuisine in Tokyo before starting at the Hyatt International in 1997. Has served as head chef in a number of countries, including in Korea at the Grand Hyatt Seoul. Started at Shunju Tameike-Sanno in 2003.

Interview

What made you want to become a chef?
When I worked part-time at a Western cuisine restaurant, I had fun when they let me make some simple dishes, and I realized that cooking was for me. It always makes me very happy to see people enjoy food that I have made.
How was the training?
It was hard when I didn't know something, like the name of an ingredient. But learning about ingredients and cooking was fun. I still use the knowledge I gained back then.
What are the most important things to do in your job?
I think it's important to communicate with the people you work with. We talk a lot as we work. Young people are very emotionally engaged, and I have a learned a lot from talking with them as well.
