Shunju, as the champion of Japanese cuisine dining, has built a level of trust with its customers, as it is not your stereotypical chain restaurant. The name symbolizes commitment to the pursuit of genuine taste while maintaining high quality, and the different Shunju restaurants offer different styles and different flavours.

Ebisu is one of the most competitive areas in the restaurant business, and even here, customers are drawn to Shunju's unique, powerful presence.

When guests enter they turn left and right to find that both sides of the restaurant are decorated differently.

One side has a "ripple" theme, the other mimics beams of sunlight being filtered by trees. Both are stylish yet casual, and promise a relaxing meal ahead.

The menu has been described as "New Japanese" and dishes are made using fresh seafood shipped directly from fishing ports in Ehime, a variety of vegetables from Kawada Farms in Tochigi, date-tori chicken from Fukushima, and beef from Saga. The staff search out perfect ingredients, only accepting those they themselves have confirmed to be truly delicious.

The philosophy of every Shunju location is to offer guests dishes through which the chefs maximize the delicious flavours of seasonal ingredients.

A variety of culinary techniques are used, from Japanese to Western and even ethnic cuisines. Customers know that when they visit, no matter what they order, it will be delicious.

Started his career at the Italian restaurant in the Hotel Four Seasons Tokyo. Later worked in Italian restaurants in Tokyo and Kobe, before joining the Shunju group.

What do you look for in ingredients?
One thing special about the group as a whole is our insistence on good ingredients. This location mainly uses fish shipped directly from ports in Kochi, vegetables from farms and other places around the country, and seasonings that we ourselves think are delicious. Even with famous brand name ingredients, if we don't like it, we don't use it. We go all out.
What do you aim for with your food?
Generally speaking, I think we can be classified as Japanese cuisine, but we use techniques from other styles as well. I have a lot of experience in Italian cuisine, and the staff freely offer new ideas. Each and every dish shows the individuality of the people who work here, and I hope guests will enjoy that.
Do you have a message for your customers?
People often ask what the common thread among all the restaurants in the group is, but everything is left up to the discretion of the chef at each location. At this location, our food shows what the staff and I are particular about. The menu changes often, and we sometimes offer vegetables and fish that people don't see in Tokyo. If anyone has any questions about the food or our ingredients, they should feel free to ask us any time.
